Ingredients
- Cupcakes:
- 1 package (18.25 oz) plain devil's food cake mix
- 1 package (3.4 oz) vanilla instant pudding mix
- 1 cup milk
- 1/2 cup vegetable oil
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup chocolate chips
- Rocky Road Frosting:
- 3/4 cup sugar
- 5 tbsp butter
- 1/3 cup whole milk
- 1 cup chocolate chips
- 3/4 cup coarsely chopped unsalted dry roasted peanuts
- 1 heaping cup miniature marshmallows
Preparation
Step 1
1. Preheat oven to 350 degrees.
2. Prepare cupcake batter: Place cake mix, pudding mix, milk, oil, eggs & vanilla in large mixing bowl. Blend on low speed for 30 seconds. Stop and scrape sides. Increase mixer speed to medium and beat 2 minutes more. Fold in chocolate chips until they are will distributed. Spoon 1/3 cup batter into lined cupcake cup, filling it 3/4 of the way full.
3. Bake 18-20 minutes. Remove pans from oven and place them on wire racks to cool for 5 minutes. Let cool for at least 15 minutes before frosting.
4. Meanwhile, prepare Rocky Road Frosting. Place sugar, butter and milk in small saucepan over medium-low heat and cook, stirring constantly, until mixture comes to a boil, 3-4 minutes. Boil, stirring constantly, for 1 minute. Remove pan from heat, add chocolate chips, and stir until they are melted. Let pan rest off heat to cool slightly but not completely, 3-4 minutes. Fold in peanuts and marshmallows until they are well combined and heat from frosting begins to melt marshmallows. Frost cupcakes.
