Spinach Salad

Ingredients

  • 1 1/2 lbs. spinach
  • 1 clove garlic, slivered
  • 3/4 c. salad oil
  • 1/2 c. red wine vinegar
  • 1/2 tsp. salt
  • Dash pepper
  • 3 hard-cooked eggs, chopped
  • 4 slices crisp bacon, crumbled

Preparation

Step 1

Wash spinach, remove stems and tar leaves into bite-size pieces. Dry. Chill 2 hours. Let garlic stand in oil 1 hour; remove garlic. Just before serving mix oil, vinegar, salt and pepper in large salad bowl. Add spinach and toss till leaves are coated. Sprinkle with egg and bacon.
