Step 1
Place meat fat side up on rack in open shallow roasting pan.
Insert meat thermometer so tip is in center of thickest part of meat and does not touch bone or rest in fat. Do not add water. Do not cover. Cook in 325F oven for 25-30 minutes per pound. Remove when 5-10 degrees lower than desired doneness. Let sit 15 minutes. Carve.
