  • sea salt and freshly ground pepper

  • brown soda bread

Step 1

Bring a small saucepan of water to a boil, add a little salt, and gently slide in the eggs.

Bring the water back to a boil and simmer 4-6 minutes, according to your taste. A 4-minute egg will be still quite soft, 5 minutes will almost set the white while the yolk will still be runny and 6 minutes will produce a boiled egg with a soft yolk and solid white.

Meanwhile, slice the soda bread and spread with butter. Then cut into strips.

As soon as the eggs are cooked, pop them into egg cups on plates and cut the top ooen or they will continue to cook.

Put the bread on the side and serve with a pepper mill, sea salt, and a few pats of butter. Eat boiled eggs with a stainless-steel teaspoon -- as silver or silverplate cutlery will react with the egg and give it a nasty taste.
