Ingredients

  • 24 ounces (about 5 cups) frozen raspberries
  • 1/3 cup sugar
  • 1/4 teaspoon lemon juice
  • pinch of table salt

Preparation

Step 1

1. Place frozen raspberries in a 4-quart saucepan. Cover and simmer over medium-high heat, stirring occasionally, for 10 to 12 minutes. Add the sugar and increase the heat to high. Boil for 2 minutes.

2. Strain the berries through a fine-mesh strainer into a bowl, using a rubber spatula to push the berries through the strainer; discard the seeds. Stir in the lemon juice and salt. Cover and refrigerate until stilled, at least 2 hours or up to 3 days.
