Chickpeas and Broccoli

Ingredients

  • 1 pound of broccoli cut into large spears,
  • stems chopped into 1/2 pieces
  • 10 cloves of garlic, smashed
  • 1 15-ounce can of chickpeas, drained and rinsed
  • 2 tsp olive oil
  • 1/4 tsp salt
  • 2 tsp lemon zest
  • 11/2 tsp dried oregano
  • 1 cup vegetable broth

Preparation

Step 1

Preheat oven to 400 degrees F. Place onion,
garlic and chickpeas in 9 by 13 inch baking pan.
Drizzle with the oil and toss to coat. Add salt,
lemon zest and oregano and toss again. Put in
oven and bake for about 30 minutes, turning
once. Remove from oven and add the vegetable
broth. Use a spatula to scrape the bottom of
the pan to get any tasty bits and to stir up the
ingredients again, and put back in the oven for
another 15 minutes. Your whole house will smell
garlicky and amazing.
