Ingredients
- 2 apples, peeled and cut into 1/2 inch chunks
- 2 pounds of sweet potatoes cut into 1/2 inch
- chunks
- 1/4 cup water
- 1/4 tsp salt
- 1 Tbsp agave nectar
- 1/4 tsp cinnamon
- 1/2 tsp freshly grated ginger
Preparation
Step 1
Spray a 4-quart saucepan with non-stick cooking
spray, then add the apples, sweet potatoes, water
and salt. Cover and cook for about 20 minutes
over low heat, stirring often. Then turn the heat
up a bit and add more water if needed and cook,
stirring often, for another 20 minutes. Add other
ingredients and mash thoroughly.
(I think this could also be cooked in a crockpot.)
