Ingredients

  • 3 - 14oz cans lower sodium chicken broth
  • 1 Tbsp dry sherry
  • 3 slices peeled fresh ginger
  • 1 lb boneless skinless chicken breast halves cut into 1/2" chunks
  • 1 cup fresh mushrooms- sliced
  • 1 1/2 cups cooked brown rice
  • 1/3 cup shelled edamame
  • 2 Tbsp soy sauce
  • 1 tsp toasted sesame oil
  • scallions

Preparation

Step 1

In pot, combine broth, sherry and ginger. Over high heat bring to a boil. Reduce heat, simmer 15 minutes. Remove ginger. Add chicken and mushrooms, simmer 5 minutes. Add rice, edamame, soy sauce, and sesame oil, heat through and 3 minutes, sprinkle with scallions.
