Fish Fritters with Classic Tartar Sauce

Ingredients
- FRITTERS:
- 1 lb firm white fish (I used Halibut)
- 1/2 cup corn kernels
- 3 finely sliced green onions
- 1/2 cup cornstarch
- 2 tbsp flour
- 1 tsp salt
- 1/2 tsp cayenne pepper
- 1/2 tsp onion powder
- 1/4 tsp pepper
- 1/2 tsp chili powder
- 1 egg, beaten
- 1/2 cup water
- canola oil for deep frying
- TARTAR SAUCE:
- 1/2 cup mayonnaise
- 1/2 tsp dijon mustard
- 1-2 tbsp green relish

Step 1
FRITTERS:
Chop fresh fillets in 1/2- 1" chunks
In a medium bowl combine the cornstarch, flour, salt, spices. Whisk egg and water. Add to dry mixture and whisk till smooth. Add fish, corn and green onions. Mix well.
Add 1" of canola oil to a deep pot and heat to 350 degrees. Drop by teaspoon into oil and cook 3-5 minutes till golden brown. Remove with slotted spoon and put on paper towel. Sprinkle with sea salt. Serve warm with tartar sauce.
TARTAR SAUCE:
Combine all ingredient. Refrigerate till ready to serve.
