Ingredients

  • Noodles:
  • 1 chicken carcass
  • 1 lemon
  • 2 cups PLAIN breadcrumbs
  • 1 cup grated Parmesan cheese
  • 2-3 eggs (sometimes 4, depending on size)

Preparation

Step 1

Cover chicken completely with water and cook about 2 hours.

Pick the remaining meat off and throw it in. Add the whole rind of the lemon, and the juice of 1/2 of it.

Meanwhile, combine the breadcrumbs, grated cheese and eggs. Mix well, until of "good consistency" (Grammy's recipe from Nona). I have found that the dough should stick together. Chill (I don't always do this, and see no difference).

Put thru meat grinder to make noodles. Bring soup to a boil, and drop noodles into the boiling soup a little at a time--as you make them.
