Chicken with Dried Fruit

Ingredients
- 1 Tablespoon olive oil
- 2 halves, (1 whole) chicken breast
- 3/4 cup chicken broth
- 1 cup dried fruit, cut into bite size pieces, (I used apricots, prunes and apples)
- 1 teaspoon fresh thyme

Step 1
Brown chicken breast on both sides in hot oil, remove from pan and set aside.
Add broth to pan and deglaze: scrape up the bits that stuck in the pan. Add fruit and thyme, then return chicken to the pan.
Cover and cook over medium to low heat for 20-30 minutes. (depends on size of the breast).
Keep an eye on the broth, if it reduces too much, add a little more so the chicken won't dry out.
Serve along side or on top of rice, pasta, potatoes, quinoa, the choices are endless.
