- Breadcrumb Mixture:
- Choux Paste 1 lb. See recipe below
- Duchess (by weight) 2 lbs.
- Seasoned Breadcrumbs 6 cups
- Sesame Seeds 1/2 cup
- Poppy Seeds 1/2 cup
- CHOUX PASTE
- Butter 1/2 lb.
- Water 1 pt.
- All-purpose flour, (sifted) 1 pt.
- Salt 1 pinch
- Eggs, whole 8 each
1.Combine the ingredients for the breadcrumb mixture.
2.Place the breadcrumb mixture on two half sheet pans.
3.Pipe into mushroom shapes into the breadcrumb mixture.
4.Place in the freezer until firm.
1.Melt butter in heavy stainless pot.
2.Add water and salt.
3.Cover and bring to a boil (without leaving water to evaporate).
4.Add flour and cook while stirring until mixture comes from side of the pot.
5.Transfer mixture to mixer with paddle.
6.At first speed, allow mixture to cool slightly.
7.Add eggs one at a time, mix thoroughly 3-4 minutes.
8.Pipe mixture while warm.
