Smoked Baby Back Ribs - in Smoker

To prepare in the oven, follow steps 1-8, re-wrap in the foil and place in 300 degree oven for 1 hr per pound. A rack of ribs is about 3 pounds. When removed from oven, can put some BBQ sauce on and broil for a few minutes.

Ingredients

  • Pork baby back ribs
  • Oil and Vinegar (mix as for a salad dressing)
  • Head Country or Rendezvous "rub"
  • Brown sugar
  • Hickory chips
  • Sweet Baby Ray's BBQ Sauce

Preparation

Step 1

1. Put hickory chips in water to soak overnight
2. Remove thin lining on bone side of ribs
3. Oil and vinegar mixture all over ribs
4. Lots of rub all over ribs (Rendezvous or Head Country)
5. Double wrap in foil and place overnight in fridge
6. Remove from fridge
7. Rub brown sugar all over ribs
8. Let set for about 2 hours out of fridge
9. Fill water pan and put hickory chips in cylinder
10. Preheat smoker to 275
11. Place ribs on racks
12. Cook for 2 hours (may have to add more wood chips after 1 hour)
13. Remove from smoker and wrap in heavy duty foil
14. Cook for one hour
15. Remove ribs from smoker and let set for 20 minutes
16. Cut and serve with Sweet Baby Rays BBQ Sauce
