Gazpacho Soup - Theresa Francavilla

Ingredients

  • 1 - 16 ounce can tomatoes or 3 large tomatoes, peeled and quartered
  • 1/2 cucumber sliced and peeled
  • 1/4 small onion, sliced
  • 1/2 green pepper, sliced
  • 1 Tablespoon olive oil or salad oil
  • 3 Tablespoons red wine vinegar
  • 2 Tablespoon lemon juice
  • 1/2 cup liquid
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 to 1 teaspoon sugar

Preparation

Step 1

Put all ingredients in blender. Mix and chill.
