Ingredients

  • 1 cup white wine vinegar
  • 1 tablespoon hot pepper sauce
  • 2 tablespoons dried thyme
  • 2 tablespoon cayenne pepper
  • 2 tablespoons garlic powder
  • 4 teaspoons salt
  • 1/2 cup light brown sugar, packed
  • 1 tablespoon honey (for final 5 minutes of baking)
  • 2 pounds disjointed, wings with tips discarded
  • 1 bunch green onions, chopped

Step 1

Combine all ingredients except chicken and green onions. Wash and pat dry chicken. Place chicken in a large shallow glass dish, or use a large Ziploc bag. Pour marinade over chicken, turn chicken to coat well. Refrigerate overnight turning wings several times to coat. Line a baking pan with foil and spray cooking rack with nonstick spray; or coat well with oil. Place rack in lined pan. Arrange wings on rack so wings are not touching. don not crowd. Put marinade in a pan over high hear and cook until reduced by half, 5 to 7 minutes or more. Brush wings generously on all sides with reduced marinade. Bake at 375 degrees for 30 minutes. Turn wings and bake for 15 minutes more. Then brush wings lightly with honey and bake 5 minutes more. Arrange wings on a platter with green onions. Make approximately 18 wing dings; recipe doubles and triples well.
