Mexican Rice

  • 2/3 cup chopped onions
  • 3 tablespoons bacon fat
  • 1 cup rice
  • 1 cup chopped green pepper
  • 1 can whole tomatoes
  • 1 teaspoon chili powder
  • 2 teaspoons salt
  • 2 cups water
  • Chopped fresh tomato and chopped green pepper, optional


Preparation time 10mins
Cooking time 40mins


Step 1

Saute onion in bacon fat in pan with tight lid. (lid to be used after sauté)

Stir in rice, 1 cup green peppers, canned tomatoes, chili powder and salt.

Add the water, bring to boil, then reduce heat, cover and simmer 20-30 minutes, until liquid is absorbed and rice is cooked.

Garnish with the chopped fresh tomatoes and green peppers.
