Potato & Celery Soup with Eggs

Ingredients

  • 2 c. potatoes, peeled and diced
  • 1 onion, diced
  • 3 c. water
  • 1 t. salt
  • 1 t. pepper
  • 1/4 c. celery, chopped
  • 2 T. butter
  • 3 eggs, hard-boiled, peeled and chopped
  • 4 c. milk
  • 1 T. fresh parsley, chopped

Preparation

Step 1

In large pot over medium-high heat, combine potatoes, onion, water, salt and pepper.

Bring to a boil; boil for 8 to 10 minutes. Add celery and cook an additional 5 to 10 minutes, until potatoes are soft.

Stir in remaining ingredients and heat through.
