Tapioca Pudding

Simple base recipe for a vanilla tapioca. I like to add berries or fruit to the mix depending on the mood.

Ingredients

  • 2 cups milk
  • 1/8 teaspoon salt
  • 5 tablespoons sugar, divided
  • 3 tablespoons cooking tapioca
  • 2 egg yolks, beaten
  • 2 egg whites
  • 1/2 teaspoon vanilla

Preparation

Step 1

Combine milk, salt, tapioca, and 3 tablespoons sugar in a sauce pan. Set heat at 350°F and heat to a boil.

Reduce heat to 221°F. and gradually add egg yolks, stirring constantly until mixture is thickened. Beat egg whites until foamy. Gradually add remaining sugar and beat until stiff. Fold hot mixture into egg whites. Cool slightly and add vanilla.
