Ingredients
- 4 (4 ounce) fillets tilapia
- 1/2 cup whole or sliced almonds
- 1 cup packed fresh basil OR parsley leaves
- 1 tablespoon fresh tarragon leaves (or 1 teaspoon dried)
- 3 garlic cloves, peeled
- 1/4 cup extra virgin olive oil
- 1/4 cup chicken broth
- 1/4 cup white wine
- 1/4 cup Parmesan cheese
- Salt and pepper
Preparation
Step 1
• Pour white wine into Microwave Pressure Cooker. Add tilapia. In blender or food processor, combine remaining
ingredients to make pesto. Spread pesto mixture evenly over fish. Place lid on top and seal.
• Place Cooker into microwave and cook on HIGH for 9 minutes.
• Remove Cooker from microwave and allow pressure to drop. When pressure has dropped, remove lid and serve with rice
