Blueberry Buttermilk Cobbler

  • 4 C fresh blueberries
  • 1/4 C + 2 t. sugar
  • 1 1/2 C low-fat baking mix
  • 3/4 C low-fat buttermilk
  • grated zest of 1 lemon

Step 1

Preheat oven to 400 degrees. Spray and 8X8 inch square baking dish with nonstick spray. To make filling, combine blueberries, 1/4 C sugar and lemon zest in large bowl; spoon into baking dish. To make topping, combine baking mix and buttermilk in small bowl, stirring just until blended. Spoon dough evenly over filling; sprinkle top with remaining 2 t. sugar. Bake until topping is golden and filling is bubbling, about 30 minutes.
