Chocolate Puffed Rice Squares

Ingredients

  • 1/2 cup raw almond butter
  • 2 tbsp. coconut butter (or 2 tbsp. more almond butter)
  • 1/2 cup date paste (+ 1/4 cup, optional for added sweetness)
  • 1/2 tsp. salt (omit for healthier version)
  • 3 tsp. vanilla essence
  • 1/4 cup raw cocoa powder
  • 3 cups puffed rice

Preparation

Step 1

1. Combine all ingredients except rice puffs in a bowl and microwave about 30 seconds. Stir, microwave 30 more seconds and stir until well-combined.

2. Stir in rice puffs and mix until thoroughly combined.

3. Line an 8x8 in pan with parchment paper and press chocolate puffs mixture into pan. Spread evenly and press down firmly using another piece of parchment paper. Freeze at least 30 minutes before cutting into squares. Store in air-tight container in freezer.


Note: Coconut butter is essentially just dehydrated coconut that has been blended to make a cream. It is a whole food and not the same as coconut oil, which is simply the oil without the meat of the coconut. For homemade coconut butter, simply add unsweetened shredded coconut to food processor and process until a creamy paste.
