  • 1 c quinoa
  • 2 c water
  • 2 medium green onion, white and light green parts only, thinly sliced
  • 2 medium avocados peeled, pitted and chopped
  • 1/4 c red pepper chopped
  • 3 tbsp cilantro chopped
  • juice of 2 limes
  • 2 tsp evoo
  • 1/4 tsp ground coriander
  • 1/4 tsp ground cumin
  • 1/2 tsp salt
  • ground pepper
  • 6 tbsp salsa



Step 1

bring quinoa and water to a boil in saucepan over high heat. reduce heat to medium low, cover, and simmer until quinoa is tender and water has been absored, 15-20 minutes. pour into mixing bowl and refrigerate until cold.
gently stir in green onion, avocado, red pepper and cilantro. mix together lime juice, evoo, coriander, cumin, salt and pepper in bowl and stir into quinoa mixture. mix 2 tbsp salsa into quinoa mixture. divide into 4 bowls and top with remaining salsa.
