Hopi Stew

This is based on a recipe using ground beef, however, I use ground venison and it tastes terrific. It is a dish similar to chili. My whole family loves it and when they provide me with the venison, I make a batch and give them half the batch.

Ingredients
- 3 pounds ground venison
- 2 large onions, diced
- 2 Tbsp. chili powder
- 6 potatoes, diced
- 1 pound carrots, diced
- 3 cans summer fresh corn
- 1 28 oz. can diced tomatoes with liquid
- 3 (4 ounce) cans chopped green chiles, with juice
- 3 cups beef broth
- 1/2 tsp. salt
- 1/2 tsp. ground black pepper
Preparation
Step 1
In a large pot over medium heat, cook ground venison until evenly brown. Stir in onions, and saute until soft and translucent. Season with chili powder, and cook for about 2 minutes. Add potatoes, carrots, corn, tomatoes and chilies. Pour in beef broth. Season to taste with salt and pepper. Reduce heat, and simmer 2 hours, or until potatoes and carrots are tender.
