Ingredients
- 1 lb uncooked boneless skinless chicken breast
- 1/2 cup celery, finely diced
- 1/3 cup dill pickles or 1/3 cup sweet gherkin, finely diced
- 1/4 cup reduced-calorie mayonnaise
- 2 tablespoons reduced-fat sour cream
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon Dijon mustard
- 1 teaspoon fresh lemon juice
- 1/2 teaspoon table salt
- 1/4 teaspoon black pepper, freshly ground

Step 1
1. Place chicken in a large saucepan and pour in enough water to cover it; set pan over high heat and bring to a boil. Boil until chicken is cooked through, about 10 minutes; drain. When chicken is cool enough to handle, cut into 1-inch cubes.
2. Transfer chicken to a large bowl and add celery, pickles, mayonnaise, sour cream, parsley, mustard, lemon juice, salt and pepper; mix until blended. Yields about 1 cup per serving.
3. For a Waldorf-like chicken salad, stir in 1/3 cup of diced apples and 2 tablespoons of chopped walnuts (for a total points value of 5 per serving).
