Roasted Potatoes - Shirley Holland
- 2 tablespoons lemon juice
- 4 teaspoon olive or vegetable oil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon garlic salt
- 1/8 teaspoon pepper
- 6 small red potatoes qyartered
In a medium bowl, combine lemon juice, oil, thyme, garlic salt and pepper. Add potatoes, toss to coat.
Place in an 8" square baking dish that has been coated with nonstick cooking spray. Bake uncovered at 450 degrees for 40 minutes or until potatoes are tender, stirring occasionally.
