- 6 or 7 medium potatoes
- 1 cup shredded sharp Cheddar cheese
- 1/4 cup butter
- 1 cup sour cream
- 1/3 cup finely chopped onions
- 1 teaspoon salt
- 1/4 teaspoon pepper
Cook potatoes whole with skins on. Peel, cool, and shred the potatoes. Melt cheese and butter over medium heat in saucepan. Add sour cream, onions, salt, and pepper. Fold potatoes into the sauce. Put into a 2 quart casserole. Dot with 2 tablespoons better. Sprinkle with paprika. Bake at 350 degrees for 30 minutes.
