Ingredients
- 1 Fryer Chicken (cut up)
- 1 Cup Shallots or Green Onion (finely chopped)
- 1/2 Pound Mushrooms (sliced)
- 1-8 Ounce Sour Cream
- 1/2 Cup Dry White Wine or Vermouth
- 1 Stick Butter
- 1 Tbsp Oil
- 1/8 Tsp Cayenne Pepper
- 1 Cup Water or Chicken Stock
- Salt
- Pepper
Preparation
Step 1
Salt and pepper the chicken pieces and brown them in a heavy skillet in the butter and oil. Remove the chicken and add the onions and mushrooms. Saute' for 5 minutes over a very low fire. Add the sour cream, stock or water, cayenne, salt, pepper, and chicken. Cover and simmer slowly until chicken is tender, about 20-25 minutes. Add the wine and stir well, then cook for 5 more minutes. Serve over hot cooked rice.
