Ingredients
- 1 T vegetable oil
- 2/3 C chopped onions
- 1 T ground cumin
- 3 – 15 oz cans black beans, undrained, divided
- 1 – 15 oz can chicken broth
- 1 tall jar medium chunky salsa
- Juice and zest of 1 lime
- 1/4 C chopped cilantro, optional
- Sour cream, optional

Preparation
Step 1
1. Heat vegetable oil in a large saucepan. Add onions and cumin and cook over medium heat until the onions are tender.
2. Puree 1 can of beans with their liquid and chicken broth in a blender or with immersion blender. Add to sauce pan.
3. Stir in remaining cans of beans, salsa, lime juice and zest, and cilantro, if using. Bring to a boil. Reduce heat to low and simmer 30 minutes.
4. Top each serving with sour cream and additional cilantro, if desired.
