Carrot Bread

Ingredients

  • 3 cups flour
  • 1 cup sugar
  • 1 teaspoon salt
  • 3 teaspoons baking powder
  • 1 teaspoon soda
  • 2 teaspoons cinnamon
  • 2 cups raw carrots, grated
  • 1 1/4 cups vegetable oil
  • 4 eggs, unbeaten
  • 1/4 chopped nuts

Preparation

Step 1

Sift flour once--measure and resift with all dry ingredients. Add carrots, oil and eggs. Beat at medium speed til mixed. Add nuts.

Bake in a greased Angel Food pan for 1 hour at 350 degrees.

Let stand 5 minutes before removing from pan. Sprinkle top with powdered sugar.
