Strip Steak with Rosemary and Garlic

Ingredients

  • 4 russet potatoes (2lbs)
  • 6 cloves garlic, thinly sliced
  • 2 Tbs. fresh rosemary
  • 2 Tbs. olive oil
  • 2 1" thick strip steaks (1 1/2 - 2 lbs)
  • salt and pepper
  • 1/2 cup sour cream

Preparation

Step 1

heat oven to 400
prick potatoes all over with fork and bake on oven rack 45-55 minutes
meanwhile in shallow dish combine rosemary, garlic, and oil
add steaks and coat
let marinate 30 min, turn once
up to 1 day in fridge
heat large skillet on med
remove steaks reserving marinade
season with 1/2 tsp. each salt and pepper
5-7 min. per side for med. rare
let rest at least 5 min. before slicing
wipe out skillet and return to heat
add reserved marinade and cook till garlic is golden
2-3 min.
spoon over sliced steak
serve with potatoes and sour cream
