Ingredients
- 2 eggs
- 1/2 cup melted butter
- 1 cup sugar
- 8 oz. plain yogurt
- 2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon lemon rind
- 1 cup blueberries
Preparation
Step 1
Preheat oven to 375 degrees.
In a large bowl, beat together eggs, melted butter and sugar. Stir in yogurt. Add dry ingredients just until blended; fold in blueberries. Spoon batter into muffin tin.
Bake 25 minutes.
