Ingredients
- 1 1/2 T cider vinegar
- 1 1/2 T EVOO
- Salt & pepper
- 1 1/2 C thinly shaved carrot
- 1 small thinly sliced Vidalia onion
- 1 1/2 C shaved cucumber
- 1 C parsley leaves
Preparation
Step 1
Combine vinegar, oil & salt & pepper in med bowl; stirring with whisk. Add carrot & onion; toss to coat & let stand 5 min. Add cucumber & parsley, tossing to coat. Serve
