Ingredients
- 2 T butter
- 1 1/2 lbs. baby squash, halved
- 1 bunch of finely chopped scallions
- 1 finely chopped shallot
- Salt & pepper
- 3 T chopped Italian parsley
Preparation
Step 1
In large skillet, melt butter. Add squash, scallions & shallot; season with salt & pepper. Cover & cook over mod heat, stirring occasionally until squash is tender & lightly browned, @ 8 min. Stir in parsley & serve
