Sauteed Baby Squash & Scallions

Ingredients

  • 2 T butter
  • 1 1/2 lbs. baby squash, halved
  • 1 bunch of finely chopped scallions
  • 1 finely chopped shallot
  • Salt & pepper
  • 3 T chopped Italian parsley

Preparation

Step 1

In large skillet, melt butter. Add squash, scallions & shallot; season with salt & pepper. Cover & cook over mod heat, stirring occasionally until squash is tender & lightly browned, @ 8 min. Stir in parsley & serve
