Spinach Soup

Ingredients

  • 1/2 a 10 oz. pkg of frozen spinach
  • 1 large potato (peeled and sliced)
  • 1 large carrot (shredded)
  • 4 scallion
  • 2 garlic cloves-sliced
  • 1 cup canned chicken broth diluted with 1 1/4 cups water
  • 1/4 teaspoon pepper
  • 1/8 teaspoon salt
  • 3/4 cup milk
  • 1 teaspoon butter
  • 2 Tablespoons grated Parmesan
  • 1/2 a small red bell pepper

Preparation

Step 1

Combine first 8 ingredients in pot. Simmer about 15 minutes, until tender. Puree solids and return to pot. Stir in milk and butter. Sprinkle with cheese and top with pepper.
