Chicken and Andouille Sausage

Ingredients

  • 1 pound chicken breast cut into small pieces
  • 6 andouille sausage links, sliced (recommend Open Nature brand chicken andouille)
  • 3 cloves garlic, minced
  • 1 small yellow onion, sliced
  • 2 T. olive oil
  • 2 yellow squash, chopped
  • 2 zucchini, chopped
  • 28 oz can stewed diced tomatoes
  • 1/2 cup chicken broth
  • 1 T. cumin
  • 1 T. green chili powder (optional)
  • salt and pepper

Preparation

Step 1

In a large skillet, saute onions and garlic in olive oil for about 1 minute on medium high heat. Add chicken and season with salt and pepper. Cook about 5 minutes. Add sausage and continue to cook until meats brown on each side. Add remaining ingredients, stir and cover with a lid. Cook until squash is tender.
