Chicken and Andouille Sausage

Ingredients
- 1 pound chicken breast cut into small pieces
- 6 andouille sausage links, sliced (recommend Open Nature brand chicken andouille)
- 3 cloves garlic, minced
- 1 small yellow onion, sliced
- 2 T. olive oil
- 2 yellow squash, chopped
- 2 zucchini, chopped
- 28 oz can stewed diced tomatoes
- 1/2 cup chicken broth
- 1 T. cumin
- 1 T. green chili powder (optional)
- salt and pepper

Preparation
Step 1
In a large skillet, saute onions and garlic in olive oil for about 1 minute on medium high heat. Add chicken and season with salt and pepper. Cook about 5 minutes. Add sausage and continue to cook until meats brown on each side. Add remaining ingredients, stir and cover with a lid. Cook until squash is tender.
