MACADAMIA ROCKY ROAD BROWNIES

Ingredients

  • Chocolate Topping:
  • 1 box family size brownie mix
  • 1 cup macadamia nuts, chopped
  • 1 1/2 cup miniature marshmallows
  • 5 tbsp. butter
  • 1/2 cup good quality semi-sweet chocolate chips
  • 1 square (1 oz.) unsweetened chocolate, chopped
  • 1/2 cup unsweetened cocoa
  • 1/4 tsp. salt
  • 1/4 cup evaporated milk
  • 1 tsp. vanilla extract
  • 1 cup confectioner's sugar

Preparation

Step 1

Preheat oven to 350 degrees. Rub bottom of 8x8" dish with butter or spray with Pam. ( "13 x 9 x 2" pan can also be used.)

Prepare brownie mix according to pkg. directions. Stir in macadamia nuts. Spread batter in prepared pan. Bake 35-40 minutes or until toothpick comes out clean. (Decrease baking time to 25-30 minutes if using 13x9x2 pan as brownies will not be as dense. You will also need to use more marshmallows, 2 1/2-3 cups, enough to cover the surface of the brownies.)

Sprinkle marshmallows evenly on hot brownies. Return to oven to bake for 10 more minutes. Marshmallows will be puffy upon removal from oven. Cool completely in pan.

Topping: Melt butter, chocolate chips and chopped unsweetened square, stirring frequently until smooth. Then add cocoa and salt ,mixing until smooth. Slowly stir in evaporated milk and vanilla. Next beat in confectioners' sugar until smoothly blended. Pour this hot topping over brownies and let cool for 30 minutes.
Serve at room temperature (or chilled) with a nice cold glass of milk!
