Light Tomato Vodka Sauce

Ingredients

  • 2 cans chopped Italian plum tomatoes, with liquid
  • 1/8 cup extra virgin olive oil
  • 5 garlic cloves peeled and crushed
  • 1/4 cup vodka
  • 1/8 cup heavy cream
  • 1 1/2 Tbsp fresh basil, chopped
  • Salt & crushed red pepper to taste

Preparation

Step 1

Heat olive oil in a large skillet over medium heat. Add crushed garlic to hot oil and cook until garlic is golden, about 3 minutes. Add tomatoes and bring to a boil. Add salt and crushed red pepper to taste. Cook for 2 more minutes then add vodka. Lower heat and simmer for 6 minutes, add cream. Stir in fresh basil.
