Cioppino

Ingredients

  • 1/4 cup olive oil
  • 2 cloves garlic, cooked
  • 2 medium onions, chopped
  • 2 green peppers, seeded and chopped
  • 1 can (1 pound) tomatoes
  • 1 can (8 oz) tomato sauce
  • 2 cups dry white wine
  • 1 bay leaf
  • 1/8 teaspoon oregano
  • salt and pepper to taste
  • 1 1/2 pounds cod or tile fish, cut into chunks
  • 1 pound shrimp
  • 1 pound scallops
  • 3/4 pound mussels (with shells)

Preparation

Step 1

Heat oil in deep, heavy skillet. Add garlic, onions, and green peppers. Cook until golden. Add tomatoes, tomato sauce, wine and seasonings.

Cover and simmer 30 minutes--add fish, shrimp and scallops--simmer 6 minutes. Add mussels and cover; cook 5 minutes.
