Shrimp Creole

Ingredients

  • 2 Tbsp. Canola oil - divided
  • 1 lb Shrimp - uncooked, shelled & deveined
  • 3 tsp. creole seasoning - divided
  • 2 lge Green bell peppers - chopped
  • 1/2 lge Chopped onion
  • 3 ribs Celery - thinly sliced
  • 2 cloves Minced garlic
  • 1 14.5 oz Stewed tomatoes - undrained

Preparation

Step 1

Heat 1 tablespoon oil in large nonstick skillet on medium high. Add shrimp and 1 teaspoon creole seasoning. Cook 2 minutes per side. Remove to plate and cover.

Add remaining oil, peppers, onion, celery and garlic. Cook 5 minutes, stirring occasionally. Scrape up any browned bits in skillet. Add tomatoes and remaining 2 teaspoons creole seasoning. Simmer, covered, 7 minutes. Stir in shrimp, cover & cook 2 minutes on medium low or until heated through.
