Crusted Spinach Casserole

Ingredients

  • 1/4 cup each chopped shallots and butter
  • 1 1/2 T. flour
  • 2/3 cup whole milk
  • 1/2 cup grated Parmesan cheese
  • 30 oz. frozen spinach, thawed
  • 1/2 cup fresh bread crumbs

Preparation

Step 1

Heat oven to 375 degrees. In skillet, cook shallots in butter 2 minutes.
Add flour. Cook 2 minutes. Whisk in milk. Stir in cheese and spinach.
Spoon into greased casserole dish; top with crumbs. Bake 30 minutes.
