Basil & Four-Cheese Barley Pilaf

Ingredients

  • 2 tsp. Oil
  • 1 Onion, finely chopped
  • 2 Stalks Celery, finely chopped
  • 21/2 C. Sodium-Reduced Chicken Broth
  • 1 C. Pearl Barley, uncooked
  • 1/2 C. Kraft 4 Cheese Italiano Light Shredded Cheese
  • 1/4 C. Fresh Basil, thinly sliced

Preparation

Step 1

Heat oil in lg. saucepan on med-high heat. Add vegetables; cook & stir 5-7 min. or till crisp-tender. Stir in broth & barley; bring to a boil. Simmer on med-low heat 40 min. or till barley is tender & liquid is absorbed, stirring occasionally. Remove from heat. Add cheese & basil; mix well.
