PINEAPPLE UPSIDE DOWN CAKE

  • 1/2 c. butter
  • 1 c. brown sugar
  • 1 c. flour
  • 1 tsp. baking powder
  • 1 c. granulated sugar
  • 1 #2 can sliced pineapple
  • marachino cherries
  • 1/8 tsp. salt
  • 3 eggs separated
  • 5 tbsp. pineapple juice

Preparation

Step 1

Melt butter in large pan. (use a 9 x 9 pan).Spread brown sugar evenly in pan and arrage pineapple slices on the sugar. Filll in spaces with cherries. Combine flour, baking powder and salt together. Beat egg yolks until light. Add pineapple juice and sifed flour mixture. Beat egg whites untilstiff and fold in gentley. Pour batter over pineapple.
Bake 375 F for 30 - 35 minutes. Turn upside down on a cake platter. Service with whip cream if desired
