- 1/2 cup solid vegetable shortening
- 1 cup sugar
- 2 eggs
- 1 cup mashed ripe bananas
- 1/2 teaspoon vanilla extract
- 1/2 cup sour cream
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 1/2 cups chopped nuts
- 1/2 cup sugar
- 1 teaspoon cinnamon
- Streusel Mixture
- 1 1/2 cups chopped nuts
- 1/2 cup sugar
- 1 teaspoon cinnamon
Preparation
Step 1
1.Preheat oven to 350 degrees F.
2.Grease 2 (8 inch round) cake pans.
3.Prepare streusel mixture and set aside.
4.In a medium bowl, beat together shortening and sugar until creamy. Beat in eggs, bananas, vanilla, and fold in sour cream.
5.In a small bowl, combine flour, soda, baking powder, and salt. Fold into creamed mixture, stirring only enough to blend ingredients.
6.Sprinkle prepared pans with 1/3 of the streusel mixture.
7.Carefully spread 1/2 the batter over the streusel mixture. Sprinkle with another 1/3 of the streusel mixture. Spread the remaining batter over the streusel. Sprinkle the remaining streusel mixture over the top.
8.Bake about 40 minutes or until a wooden pick inserted in the center comes out clean.
9.Cool in pans on a wire rack for 10 minutes, turn out onto serving plates or wire rack.
10.Serve warm or at room temperature.
11.Makes 2 (8-inch round) coffee cakes.
