Ingredients
- 1 1/4 cups flour
- 1/2 cup margarine
- 1 teaspoon lemon rind
- 3 eggs, separated
- 1 tablespoon lemon juice
- powdered sugar
- 1/2 cup sugar
- 1 cup chopped nuts
Preparation
Step 1
1. Sift flour, cut in margarine. Stir in egg yolks, lemon rind and juice; blend with fork to form dough. Divide and shape into 24 small balls; place in a shallow dish; chill 4 hours.
2. Beat egg whites until frothy; beat in sugar, 1 tbs at a time until mixture stands in peaks; fold in walnuts.
3. Roll out each ball to a 4" round; spread with 2 tbs nut mixture; roll up jelly roll fashion; arrange seam side down on ungreased baking sheet.
4. Bake at 350 degrees, 15 minutes.
5. Slice each diagonally into 3 pieces; sprinkle with powdered sugar.
