Mix In The Pan Cake with Chocolate Ganache Frosting

Ingredients

  • 11/2 cups all-purpose flour (375 ml)
  • 1 cup sugar (250 ml)
  • 1/4 cup cocoa (60 ml)
  • 1 tsp baking powder (5 ml)
  • 1 tbsp lemon juice (15 ml)
  • 1 tsp baking soda (5ml)
  • 1/4 tsp salt (1 ml)
  • 1/3 cup unsalted butter, melted (75 ml)
  • 1 cup warm water (250 ml)
  • Chocolate Ganache Frosting
  • 1 cup 35 % cream (250ml)
  • 8 oz semi sweet chocolate, chopped (250 g)

Preparation

Step 1

1) Preheat Flavorwave oven to 400°F (200°C). Combine first 6 dry ingredients in a bowl and mix well.
2) Add butter, lemon juice and water. Mix well with a fork until smoothly blended. (Do not use any electric appliances).
3) Prepare a 9 inch (23 cm) cake pan, cut out a piece of parchment paper to fit the bottom of the pan and grease bottom and
sides.
4) Pour batter, scraping with a spatula into prepared 9 inch (23 cm) square cake pan.
5) Bake on the top rack of the oven for 35 – 40 minutes, or until cake springs back when lightly touched. Cool s lightly.
Chocolate Ganache Frosting
1) Bring cream to a boil, then pour it on top of the chocolate. Whisk while chocolate melts, then beat until smooth.
2) Cover and refrigerate until frosting is cool and slightly set, about 45 minutes.
3) If the frosting becomes too firm, soften at room temperature to spreading consistency.
