Ingredients
- 15 oz of raisin bran cereal
- 3 C. Sugar
- 5 C. Flour
- 2 tsp. baking soda
- 2 tsp. salt
- 4 eggs
- 1 1/4 C. unsweetened applesauce
- 1 qt. buttermilk
- 1 to 2 tsp. cinnamon
- 2 C. Craisins
Preparation
Step 1
Pre-heat oven to 375
Spray muffin tins with non-stick baking spray
In a large bowl sift together Flour, Sugar, baking Soda, Cinnamon and Salt
Add Cereal and stir well
Add Craisins
In another large bowl – Mix together Wet ingredients
Slowly add Dry ingredients to Wet ingredients
Use an ice cream scoop to fill the muffin tins 3/4 full
Bake for 18 to 22 minutes or until tops spring back
Cool in tins for 5 minutes then remove to a cooling rack
Delicious warm with apple butter
Use 1 C. Craisins and 1 C. Raisins Or 1 C. Craisins and 1 C. chopped walnuts
Meal type: breakfast
Yield: About 2 dozen muffins
