Smothered Chicken

Ingredients

  • 4-5 pound chicken; cut up
  • 1/2 cup matzo meal
  • 1 teaspoon Salt
  • 1/8 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1/4 cup peanut oil
  • 1 large onion; sliced
  • 3 stalks celery; chopped
  • 1 large carrot; diced
  • 1 cup mushroom; sliced
  • 10-1/2 ounces condensed clear chicken soup; undiluted

Preparation

Step 1

Roll chicken in a mixture of the matzo meal, salt, pepper and garlic
powder. Brown in hot peanut oil in a large skillet. Place chicken in small
roasting pan or Dutch oven. In the same skillet, in the remaining oil,
saute the onion, celery, carrot and mushrooms until onion is tender. Place
in pan with chicken; heat chicken soup and add. Cover and bake at 325°F for
1-1/2 hours or until tender. Serves 4 to 6.
