Taco Soup

Ingredients

  • 2 lbs. lean ground beef (I used turkey)
  • 1 onion
  • 1 can (4 oz.) diced green chilies
  • 2 cans corn
  • 4 cans Mexican stewed tomatoes (I used: 2 Mexican, 1 normal, and 1 original Rotel)
  • 1 can pinto beans
  • 1 can kidney beans
  • (I used 2 cans navy beans)
  • taco seasoning packet
  • ranch dressing/dip packet
  • optional toppings: chopped cilantro, shredded cheese, chips, sour cream

Preparation

Step 1

Coarsely chop onion. Brown meat and onion in large stockpot. Once meat is cooked through, add all ingredients to stockpot (except optional toppings). DO NOT DRAIN ANYTHING before adding to meat mixture. Cook over medium high heat for 30 minutes.

Serve with desired toppings!
