Ingredients
- 1 pound stewing beef
- salt and pepper
- 1 tablespoon vegetable oil
- 2 tablespoons all-purpose flour
- 3 to 4 fingerling potatoes, diced
- 1 large carrot, peeled and thinly sliced
- 1 rib celery, diced
- 1/2 large onion, diced
- 1 clove garlic, minced
- 3 sprigs fresh thyme
- 1 bay leaf
- 1 ounce of pearl barley
- 1 cup of stoudt (or other rich beer)
- 1 cup of beef stock
- 1 cup frozen peas
Preparation
Step 1
• Remove any excess fat from meat and cut into bite-sized pieces. Season with salt and pepper.
• Pre-heat skillet over medium-high heat. Brown meat in skillet with vegetable oil. Transfer beef to Microwave
Pressure Cooker.
• Place all ingredients except peas into Microwave Pressure Cooker. Place lid on top and seal.
• Place Cooker into microwave and cook on HIGH for 15 minutes.
• Remove Cooker from microwave and allow pressure to drop. When pressure has dropped, remove lid, add peas, adjust seasoning and serve.
