Ingredients

  • 1 cup melted butter
  • 3/4 cup white sugar
  • 3/4 cup brown sugar, firmly packed
  • 1 tsp baking soda
  • 2 tsp coconut extract
  • 1/2 tsp salt
  • 2 beaten eggs
  • 1 cup finely chopped coconut (from approx. 2 cups coconut flakes)
  • 2 1/4 cups flour (packed down in measuring cup)
  • 1 cup chocolate chips

Preparation

Step 1

Melt the butter. Mix in sugars, and add the baking soda, coconut extract, and salt. Add the eggs and stir it.

Chop the coconut flakes in the food processor. Measure the coconut after it is chopped. Pack it down when you measure it, and add it to the mixture, stirring thoroughly.

Add 1/2 the flour and chocolate chips. Stir well to incorporate. Finish by mixing in the rest of the flour. Let the dough rest for 10 minutes on the counter, uncovered. Drop by teaspoons onto UNGREASED cookie sheets. If too sticky, chill slightly first. Bake at 350 for 9-11 minutes or until golden brown around the edges.

Let cool for three minutes, then remove to rack to finish cooling.
